Easy Crock Pot Roast Chicken

With my busy schedule I need to be able to prepare meals that are quick, easy and tasty.  I'm sharing with you my favorite crock pot recipe.  My family absolutely loves this recipe.  Additionally since this recipe calls for a whole chicken, you'll have leftovers which can be used to make other dishes in the week.

Ingredients
3 - 4 lb. Roasting chicken
1 1/2 tsp Salt
1/4 tsp Pepper
1 tsp Parsley flakes, divided
1 Bouillon cube
1 Tbsp Butter
1 cup of Water

Preparation
  1. Thoroughly wash chicken and pat dry.
  2. Sprinkle cavity with salt, pepper and 1/2 tsp of parsley flakes.  Place in crock pot, breast side up.
  3. Dot with butter or brush with melted butter.
  4. Sprinkle with remaining parsley flakes.  Add water around the chicken.
  5. Add bouillon cube to the crock-pot.
  6. Cover and cook on low for 4 hours or on high for 8 to 10 hours.
You'll know it's done when the chicken falls off the bone.

If you're always on the go like me, then a crock pot with an auto shut off is very helpful.  Listed below is a crock pot like mine and it works great.  You can set the timer for 4, 6, 8 or 10 hours.  Once the predetermined time has been met, the crock pot goes into warm mode.

  3. I love crock pot recipes....it's really tough trying to fix dinner with two little ones always underfoot! I have the Fix-It-And-Forget-It Lightly crock pot cookbook, but hadn't come across the 5 ingredient one yet. Thanks for the recommendation!

  5. I believe it is high for four hours or low for eight to ten hours...otherwise you might have incendiary roast chicken, rather than easy crock pot roast chicken.
